Maceration with the skins during 18 days to perfectly extract all its qualities and malolactic fermentation in 500 litre barrels.
After blending the varieties (on same proportions), the coupage stays for 12 months in 225 litre new oak barrels.

Lo Senyor del Castell conveys aromas of forest fruits and preserved fruits with a subtle taste of the forest floor. Toasted balsamic notes that allow dried fruits and spices to waft through. This sensory tour covers the rich mineral array of this region’s soils.
