A selection of old White Grenache vines.
Varietal: 100% White Grenache
Vineyards: Selection of old vines. At 450 meters of altitud. Different soil types but mainly slate.
Harvesting: September. Taking advantage of the colder hours. By hand, in boxes of 15 kg.
Process: Selection of the grapes at the winery. Cold maceration with the skins during 12 hours at 5ºC in an inert atmosphere. The obtained free run juice is transferred to new French oak barrels, where the fermentation takes place at 15ºC during 20 days. Aging in the same barrels for 10 months. Weekly battonages to keep the lees in suspension. After removing the lees, the wine is bottled with no clarification, nor stabilization neither filtration to keep the features of White Grenache. Limited production of 1.100 bottles.
Colour: Pallid yellow with golden flecks, clean and bright.
Nose: Displays a whole array of aromas, fruity such as grapefruit, apple, lychee, mango, citrus fruits, perfectly combined with the tinge of aging. Roasted dry fruits, spices, vanilla, cinnamon and sandalwood are discovered, wrapped in fragrances of the lees. There are also soft notes of cake contrasting with presence of minerals and elegant memories of white flowers such as acacia.
Palate: Powerful, molt unctuous, with lots of volume.
Well balanced with acidity. Freshness highlights. Long finish, reminding the grapefruit, mango, vanilla and toasted aromas.
Fish stews, all kind of seafood, even white meats. Best serving temperature: 14-15ºC.
